Gabby's Vegan Low Carb Mac And Cheese

- 16 ounces whole wheat penne
- 2 bags dairy free cheese (We like to use Violife shredded cheese)
- 2 cups unsweetened dairy free milk (We prefer almond milk)
- 1/2 cup whole wheat flour
- 3 tablespoons vegan butter or olive oil
In a large pot boil and drain pasta according to package instructions. While the pasta is boiling prepare a medium saucepan to mix in the cheese sauce. Heat your dairy free butter or oil in the medium saucepan on low heat. Pour in the milk. Stir for two minutes. Add the flour to the mixture. Use a whisk or a spoon and stir until smooth. Once all lumps are gone add two cups of your non dairy cheese shreds and continue to stir for five extra minutes.
Once both steps are completed pour the mixture in a baking dish. Set your ovens temperature to 350 and bake for 40 minutes. Add another half cup of your non dairy shreds on top of your pasta dish. Bake for another five minutes. If you like garnish with parsley, red pepper flakes or your topping of choice.
